It is difficult to be clear about what to eat when there are a number of varying ‘truths’.
I do appreciate it is hard to understand when even government sources are also confusing and complex – even our fantastic, superb, underfunded NHS sends out conflicting messages.
The NHS website list pastries, biscuits, cakes, ice cream, sweet snacks, chocolate, crisps, savoury snacks etc as sources of saturated fat and yet all of these products are primarily refined carbohydrates.
These are not saturated fats, a cake’s primary macronutrient is carbohydrate and, secondly, there is more UNsaturated fat than saturated fat in the selection of cream cakes, pastries, savoury snacks, crisps and sweet
Authors like Dr Kendrick explain that we are still following government guidelines that are a hangover from science in the 1950s. The concern that reducing your cholesterol is your way to be healthy.
I do like to add a modicum of common sense and make things simple. As evolving species we ate meat with lots of fat, any fat occurring naturally in real food would have killed us off hundreds of thousands of years ago. You need cholesterol. Cholesterol is good for your brain function.

My advice is to listen to your body and apply common sense. My job is to make nutritional advice as clear and simple. Step over the confusing and alarming stories you read online or even on the news and watch how your body reacts to your food.
If that isn’t obvious then the old adage:
“If your granny wouldn’t recognise it, it probably ain’t’ good for you”
Adverts bombard you every day with some new fabulous yoghurt, margarine or milk drink assuring you that these things lower cholesterol, thus protecting your heart.
For instance, Olivo, which is Olive oil ‘hydrogenated’ (ie processed and manufactured at high temperatures to add more hydrogen). The clue is in the word ‘hydrogenated’
Where Olive oil is fine, hydrogenated olive oil is not. The process that Olive oil goes through to make it spreadable turns it into a trans fat – which is unnatural and damage your health.

There is no connection between cholesterol in food and cholesterol in your body
Cholesterol that you eat and enters your intestine and is subject to absorption. About 15-20% cholesterol molecule in your body comes from your food via your mouth, but most cholesterol molecules come from your body from your bile and gallbladder.
About 85% of the cholesterol you are going to absorb after a meal is produced by your body, not from your food

Ancel Keys is the American scientist who promoted the cholesterol thesis, he wanted the message to get through to the public so he made the reasoning simple ‘fats make you fat’. Easy to understand and for the population to digest
French paradox: French consume more saturated fat than any other nation in Europe and they have the lowest rate of heart disease. Switzerland has the second highest consumption of saturated fat. Maybe it is because the French eat a lot of garlic ?!@
Swiss have the highest average cholesterol levels and the second lowest rate of heart disease
Inuits have a high saturated fat and low rate of heart disease.
Dr George Mann in Kenya 1970s Masai tribe found the highest cholesterol and saturated fat intake ever discovered which came from milk, meat and fat. Yet the rate of heart disease was virtually zero.
Women have higher cholesterol levels than men and much lower rates of heart disease. Dr Kendrick believes that cholesterol levels have no effect on heart disease rates in women.
Australian aboriginal men have the highest rate of heart disease in the world – four times the rate than the UK and 10 times France and 50 times greater than French women. Yet their average HDL (good cholesterol) is lower than the UK, body mass index is considerably less than British men.
Japan have an elevated risk of strokes with low levels of cholesterol. Over the last 50 years, cholesterol levels have risen by 20% in Japan and the rate of stroke has fallen. When cholesterol levels in Japan rose life expectancy increased and death from all cardiovascular disease fell dramatically.
The Israeli paradox is a catchphrase, first used in 1996, Israeli Jews have a relatively high incidence of coronary heart disease (CHD), despite having a diet relatively low in saturated fat.
Russians have the second lowest cholesterol level and yet they have the highest rate of heart disease

What does cause heart disease?
There are 2 theories:
Firstly Jerome Burne concludes it is inflammation that causes damage to the arteries (over which clots and plaques form). Burne explains that it is important to cut out sugar and refined carbohydrates from your diet, as this reduces inflammation because of the high levels of glucose and therefore extra insulin it triggers, can inflame and damage arteries. This is an interesting theory because it simultaneously explains why Diabetics have a higher incidence of heart disease.
Secondly, Dr Kendrick discusses how the arterial wall is damaged by stress. He has a very convincing strategy that stress plays a very important part in heart disease
Stress comes in many forms of time pressure or constant grinding worry like money problems or having a painful boss, moving house or getting married.
“Persistent severe stress makes it 2.5 times more likely that an individual will have a heart attack compared to someone who is not stressed” Annika Rosengren Professor of Cardiology at Goteborg University of Sweden
Destruction of community is the highest form of stress and Dr Kendrick explains why the top countries have highest heart disease:
- USA 1920s to a peak in late 1940s period when the USA took more immigrants than any other country in the history of the world
- Japanese Americans have a higher rate of diabetes than native Japanese, and yet it is not seen in Japanese migrants who retain a Japanese lifestyle.
- Finland 1960/70s was reclaimed by Russia
- 1970s Glasgow tearing down of the Gorbal slums where there was a strong sense of ‘belonging’ and forcing the population into concrete soviet looking blocks in Cumbernauld
- Eastern Europen countries forcibly moved within communities and then 1980s communism lost it grip and even greater chaos and stress followed.
- Australian aboriginals have culture, lifestyle, status and communities completely shredded
- Maori’s in New Zealand
Eating real food like meat, cheese, eggs and butter are healthier options than ‘processed’ refined carbs.
